Lisa Brooks, PhD, RD, AAFCS Director-at-Large, holds the rank of associate professor in the School of Family and Consumer Sciences at Eastern Illinois University in Charleston. She has been teaching in higher education since 1998. Dr. Brooks has held various roles during her career, including leading Study Abroad Italy tours; working with Walt Disney World as the Disney College Program Internship Coordinator and participating in the Disney Educators Forum; earning a certificate in etiquette training by the Protocol School of Washington, and serving as the SFCS Internship Coordinator. Her research focus is in nutrition and wellness, as well as leadership excellence in the hospitality industry, to complement her dual roles teaching both hospitality management and dietetics courses.
Dr. Brooks has had many regional, state, and national roles in AAFCS, including serving as an AAFCS Leadership Council member, serving as an AAFCS Senator, serving on the 2017 AAFCS Leadership Academy Development Team, participating in the 2015 AAFCS Leadership Academy, presenting research sessions at multiple AAFCS conferences, serving as an AAFCS conference reviewer, serving as the president of the Illinois Affiliate (ILAFCS) from 2015-2017, serving as the ILAFCS state conference chair, and serving as the faculty advisor for the EIU Student Association of Family and Consumer Sciences. She continues to present research on FCS Day and the impact of the AAFCS “Dining In” for Healthy Families signature initiative.
Dr. Brooks enjoys spending time at a summer home in New Harmony, IN; bicycling; cooking; enjoying classical music concerts; and visiting art museums. She is an advocate for animals, especially dogs.
