Jim Painter earned a bachelor’s degree in nutrition from Southern Illinois University – Carbondale, a master's degree from Oklahoma State University and a Ph.D. from the University of Illinois. He has been a Registered Dietitian since 1980 and is a member of the Academy of Nutrition and Dietetics.
Dr. Painter worked for Marriott Corporation in the 1980s, taught at the University of Illinois in the field of Nutrition and Hospitality during the 1990s and at Eastern Illinois University in the 2000s, where he also chaired the School of Family and Consumer Sciences. Currently he is an emeritus professor for Family and Consumer Sciences at Eastern Illinois University, adjunct professor at the University of Texas School of Public Health, and serves on the Scientific Nutrition Research Panel for the California Raisin Marketing Board and Paramount Pistachios. He also consults for the National Pasteurized Egg Board, the Dairy Council, and Sun-Maid Corporation.
A recipient of numerous grants that have focused on changing our eating environment, Dr. Painter has more than 100 peer-reviewed publications and presentations to his credit. He produced the video, "Portion Size Me," and authored, Nutrition You Can Use. His current studies focus on mindless eating and stealthy calorie intake control.
Dr. Painter's presentations have taken him around the world as he shares his wealth of knowledge, experience, and expertise. He and his wife Rosemary live in the United States and have two sons, two daughters-in-law, and four grandchildren.
