Join us for a fun and interactive 90-minute bake-along to master the art of the bagel! We will explore everything bagel, including its contested origin dating back to the 17th century, regional variations, science-based techniques to achieve the characteristic shine and chew, and practical tips for making bagels in the classroom. This workshop is suited to seasoned bread bakers and novices alike. As you bake along with us from your own kitchen, we’ll guide you through a simple and delicious bagel recipe that uses techniques like kneading, cold proofing, shaping, and boiling. We’ll discuss gluten development, low-hydration dough, proofing, flavor development, building dough tension, crust formation, and practical tips for adapting recipes to suit your schedule and equipment.
Participants will receive the full recipe, a list of tools and ingredients, and suggested timelines to adapt the recipe to their class schedule.
